Verdict

Pick Square if you are a US café, cart, or counter that needs a tap this Saturday, published processing, and a path to Square Payroll when the bar becomes a crew. Pick Toast if you already run a Toast dining room, will become a restaurant on purpose, and have the effective rate and hardware in writing. Do not pick Toast to “look like a real restaurant” for a 12-foot bar. Do not pick Square Plus because the stand is pretty — model processing first.
